Here comes another recipe; healthy cheesecake New York Style. Healthy does not necessarily mean less fat. Some fat is good for you. So here goes Whatcha need. One small avocado One 14 oz tub of marscopone (i suck at spelling sorry) A quarter cup cream cheese One egg yolk Three egg whites Half a cup of sugar Fresh strawberries Graham crackers Three tablespoons of coconut oil 1.At room temperature, mix ripe avocado cream cheese and marscapone. Avocado is another substitute for egg yolk you could 86 the yolks all together. I just want it extra velvety. It will still be pretty velvety. 2.Add one quarter cup of sugar to the avocado mixture 3. Cut strawberries in half and emulsify them in sugar and water. Say what?! Emulsify: fancy as word for make a quick preserve. You take the strawberries, cover them in water(1/2 a cup) and sprinkling the sugar over it then put it in the fridge. Youll come back to syrupy fruity goodness. 4. Crush graham crackers. Add the coconut oil and continue crushing. You can use any oil but canola or vegetable oil. Place the crust mixture in the bottom of a spring pan 5. Whip egg whites until they have stiff peaks. Tip: oxygen creates the air bubbles which gives you the whipped texture. You can add the traditional cream of tartar or you can use white wine vinegar to speed up oxidation that helps it stay light 6.Fold the egg white into the avocado mixture and pour into the spring pan. 7. In an oven preheated at 200° F bake for 45 minutes 8. Let the cheescake cool and pour the emulsified strawberries atop the masterpiece and enjoy
