Here is a double bevel tapered (along the length) sheeter guillotine. With this particular knife our engineer has re ground both the bevels as the size of the small cutting angle is critical. He has also skimmed the back of the knife. Skimming the back can make your knives last longer as less material has to be removed from the cutting edge.
