Here is a great heartly healthy lentil soup I made the other day: (Note: This recipe was doubled so just cut everything in half if you want less. This recipe as is makes 12 servings. I used a pressure cooker but you can make it on the stove as well.) 2 tbsp olive oil 2 med onions, minced 4 cloves minced garlic 2 tbsp fresh ginger peeled & minced 1 Jalepano minced 4 med carrots diced 2 cups dried green lentils 1/2 tsp cumin 2 bayleaf 2 cans coconut milk 4 cups vegetable stock 2 tbsp low sodium soy sauce salt & pepper to taste 1. Heat olive oil in medium sice pot over medium heat. Add onion, garlic, ginger, Jalepano, & carrots. Saute until onions are soft and translucent. About 3 minutes. 2. Reduce heat to low. Add sauted vegetables, lentils, cumin, bayleaf, coconut milk, and stock. Simmer until liquid has reduced and the lentils are tender, about 30 minutes. 3. Season with the soy sauce and salt and peppet to taste. **Garnish with chopped cilantro 300 calories, 12g fat, 9.5g fiber, 11g protein
