Here is a great question from one of my followers about air bubbles. My daughter and I canned applesauce for the first time. She is concerned because we can see air bubbles (even though we did the required stir around the the jars) after they have been processed. Answer: You will see additional bubbles after you water bath from the additional cooking of the sauce. The most important reason to getting the bubbles out before you put the lid on is to have proper headspace. Once you remove the air bubbles the level of applesauce will go down so you can fill the jar up with additional applesauce to get to the 1/2 headspace.
