Here is a great summer salad to enjoy in the sunshine now that summer seems to be here!! Toss together some Merchant Gourmet ready cooked puy lentils, cherry tomatoes, parsley, coriander, mixed peppers, avocado and seasoning in a large bowl. In a smaller bowl mix a chopped red onion, crushed garlic clove, lime juice to taste and a splash of balsamic vinegar. Combine the two and drizzle with olive oil to serve. Have a great weekend!!
