Here is a recipe for Gluten Free Crumpets 450g GF Self Raising Flour 1 tbsp Caster Sugar 1 tsp Salt 2 tsp Dried Yeast 435mL lukewarm milk 1/2 tsp Bicarbonate of Soda Combine flour, sugar, slat and yeast in TM bowl. Pour in the milk and mix on speed 4-5. Cover and set aside in a warm place for 1 hour or until doubled in size. Use a spatula to stir the mixture until it deflates. Combine 4 tblsp of lukewarm water with the bicarbonate of soda in a small bowl and add it to the batter on speed 4 until smooth. Set aside for 15 mins. Brush a large heavy-based non-stick frying pan with oil and put onto medium heat. Brush four 9.5 x 2cm crumpet rings with oil, then place in the pan and reduce the heat to low. Pour enough batter into each crumpet ring to fill to 3/4 full. Cook for 12-15 mins or until large bubble come to the surface, the base if golden and the top is set (if the bubble dont pop you can use a skewer to pierce them). Cover the pan and cook for a further 2-3 mins. Use a sharp knife to loosen the crumpets and remove from the rings. Put the crumpets on a wire rack to cool. Repeat the process after washing the crumpet rings and re-oiling them. MAKES 10 This recipe if from Eat Well Live Well with Gluten Intolerance and adapted for the Thermomix.
