Here is how we select and purchase fish. On certain days of the week we meet commercial long line boats to pick up fish. We buy only from boats that make short trips. Most long line boats are out 2-3 months. Our boats make 7-10 day trips. We do not want to sell 2-3 month old fish. During the week we get notice that a boat in headed in and what is in the catch. From the top of that catch we have them set aside the amount of fish we want. Our fish are never frozen before they hit the dock. Normally they have been caught within the last 48 hours because they are the fish on top. Once the boat arrives we inspect and grade our fish. We take delivery never letting the crew throw the fish. Almost all fish landed in Fiji are thrown off the boat onto the dock and then into the back of a truck.getting damaged both times. In these pictures you will see how gently our fish are handled. We carry large ice bins on our truck. An ice layer is put on the bottom of the bin to cool and cushion the catch. Ice is added as they are loaded. What you will in these pictures is A Grade Sashimi tuna that we purchased this morning. You will see how we grade the tuna and cut fillets. The fillets you will see will sell for around $20.00 per kilo in Fiji. In America or Japan those fillets will got to at least 3 times that price in US dollars or around $120.00 FJD. per kilo..
