Here is my menu for the first few weeks. Please let me know at least a day ahead if you would like any of these dinners and if you would like them cooked to re-heat or if you would like to bake them in your oven. Tuesday, Aug. 20th Jens Pasta- Sweet basil Italian sausage is browned and then added to garlic, sun dried tomatoes in a white wine reduction sauce. Next it’s tossed with fresh basil, pasta and topped off with parmesan cheese. Price- $26.00 (Serves 4) Wed., Aug. 21st Caesar Salad W/ Smoked Chicken- This is not your traditional Caesar. The dressing is made with olive oil, garlic, lemon juice and Dijon mustard. Tossed with Romaine lettuce and homemade corn bread croutons and topped off with a chicken breast straight from the smoker. Price- $22.00 (Serves 4) Thursday, Aug. 22nd Turkey Meatloaf and garlic parmesan mashed potatoes- This isn’t your Mothers meatloaf! It starts with sautéed onions, fresh thyme, lean ground turkey, breadcrumbs and rich tomato based broth. Then top it off with garlic mashed potatoes that have a parmesan cheese crust. Price- $26.00 (Serves 4) Tuesday, Aug. 27th Enchilada Pie- This is basically a Mexican lasagna. Layers of corn tortillas are filled with ground beef, onions, enchilada sauce, and cheese. Baked until brown and bubbly! Cut this into squares and serve with a spoonful of sour cream. Price- $25.00 (Serves 6) Wed., Aug. 28th Roasted Veggie Pasta Salad with Smoked Chicken- Grilled veggies (zucchini, squash, red onion, red peppers) and pasta are marinated in herbed balsamic vinaigrette. Top it off with a smoked chicken breast and it’s the perfect meal on a hot night. $25.00 (Serves 4) Thursday, Aug. 29th Meatball Subs and Salad Kabobs- This is always a kid’s favorite! You are given homemade meatballs in a rich tomato sauce, hoagie rolls, and provolone cheese. Simply assembly and wrap in foil then pop into your oven for a steamy sandwich. Most kids will eat anything if it is on a stick so why not try salad. They will have a ton of fun dipping their veggie swords into homemade ranch dipping sauce. $27.00 (Serves 4) Tuesday. Sept. 3rd School holiday and my 40th Birthday so I am taking the day off! Wed., Sept. 4th Chicken Roll Ups- A pounded chicken breast is wrapped around asparagus and herbed seasoning then the whole thing is wrapped with bacon. Bake this in your oven with roasted garlic potatoes and let your guests thing you did all the work. $28.00 (Serves 4) Thursday, Sept. 5th Comfort Mac and Cheese- I can’t lie this is Martha Stewarts recipe. A homemade cheese sauce is mixed with macaroni noodles and then baked with buttered bread cubes on top. Sometimes the simplest meals are the best! $23.00 (Serves 4)
