So when considering the frequently oversimplified concept of healthy fats (which essentially means those high fat foods that are low in saturated fat and high in either polyunsaturated or monounsaturated fats) whole nuts and seeds are the gold medalists, nut butters are silver medalists (chewing satisfaction is lost and higher calorie absorption) and non tropical vegetable oils are bronze medalists (since not only is chewing satisfaction lost and full calorie absorption – oils are also the highest calorie density foods on earth with zero protein, zero fiber and a significant amount of micronutrients are lost versus their whole food cousins and healthy fat gold medalists: nuts and seeds).
