Good Bread that is good for you too Good real bread was once common in Britain and eaten by everyone. Every baker was baking it. Today, a manufacturing process, invented more than 50 years ago, that uses cheaper flour and fast fermentation has replaced traditional baking. As a consequence, most bread produced is doing nothing more than keeping your fingers dry when eating a sandwich. And that is not the worst of it. We have now grown to expect bread to be cheap often not realizing the number of additives and processing aids used to speed up baking. Not surprisingly the number of people who avoid bread is growing. This is a shame as Real Bread can be a nutritious and healthy addition to our diet. But now, Real Bread is back. Since March this year we have opened the doors to the Forest Bakehouse, a Community Bakery in the Forest of Dean, bringing the enjoyment of real bread back to your table. At the Forest Bakehouse we celebrate the simplicity of baking by only using what you can find in your kitchen cupboard: flour, water, salt and yeast or sourdough leavening. Nothing else is added. Delicious Bread that is good for you. There is however one very important additional ingredient that we also use, and that is time. Longer fermentation is essentially needed for the dough to develop and ripen, just like fruit ripens and cheese matures. This enables us to bake bread with a higher nutrient content, more available B vitamins and anti-oxidants. Digestibility is increased as anti-nutrients and potentially harmful substances are decreased or neutralized, especially when using sourdough. Most importantly though is that our way of baking unlocks complex flavours, making bread that tastes delicious and is good for you too. Where can you buy our products? We are working to make our products more widely available in the Forest of Dean. While none of our range is found in any shops yet you can purchase directly from the bakery in Longhope. We have also established several Bread Collection Points throughout the Forest of Dean. Orders can be placed directly with us and we coordinate the delivery to the Collection points from where you can collect your order. In addition, we are now making our bread available via the Forest of Dean Food Hub. Please contact us to find out which areas we deliver to or visit our bakehouse in Longhope.
