Here is the delicious Pumpkin Bread Recipe I have been making the past 4 yrs for Thanksgiving. I use walnuts and make a cream cheese icing/frosting. So, if any of you want to try this recipe Here ya go! =) I added side notes,optional substitute ingredients that I use and I also included is a video of the pumpkin bread being made. SUPER EASY and SOO GOOD! =) Here it is Herman Marilynn Garcia PUMPKIN BREAD RECIPE Grease and flour two 7x3 inch loaf pans I use one bundt pan also. Preheat oven to 350 degrees F (175 degrees C). Ingredients you will need. 1 (15 ounce) can pumpkin puree ( Optional, I have not been using canned food for months now, unless I have to. But this year, I will be making pumpkin puree from real pumpkins! =) it will be my first time too but I never thought of using fresh pumpkin, because I was not sure how to prepare it. I found a how to video on how to prepare it if anyone is interested! =) Canned puree is great too! I just have different views on canned foods these days. Okay, back to the recipe. 4 eggs 1 cup vegetable oil (Optional, I use light Olive oil) 2/3 cup water 3 cups white sugar (Optional, I also substitute white sugar with pure cane sugar. its a light brown or if you want, you can use dark brown sugar. (Totally up to you) In a large bowl, mix together pumpkin puree, eggs, oil, water and sugar until well blended. In a separate bowl, whisk together the flour, baking soda, salt, cinnamon, nutmeg, cloves and ginger. Lastly, stir the dry ingredients in a second bowl then into the pumpkin mixture until just blended 3 1/2 cups all-purpose flour 2 teaspoons baking soda 1 1/2 teaspoons salt 1 teaspoon ground cinnamon 1 teaspoon ground nutmeg 1/2 teaspoon ground cloves 1/4 teaspoon ground ginger . Pour into the prepared pans. *Note* Instead of buying each spice individually you can also buy Pumpkin pie Spice. Bake for about 50 minutes in the preheated oven. Loaves are done when toothpick inserted in center comes out clean. Video > allrecipes/video/678/downeast-maine-pumpkin-bread/detail.aspx?prop24=RD_VideoTipsTricks Cream cheese Icing/Frosting 2 (8 ounce) packages cream cheese, softened 1/2 cup butter, softened 2 cups sifted confectioners sugar 1 teaspoon vanilla extract Directions In a medium bowl, cream together the cream cheese and butter until creamy. Mix in the vanilla, then gradually stir in the confectioners sugar. Store in the refrigerator after use.
