Here is the recipe for the Bacon Jam...I made it last night and am having it on toast this morning...It is quite yummy! :) Bacon Jam 2 TBSP Oil or bacon grease 4 Cups crumbled bacon (3 lbs sliced or Costco crumbled bacon in a bag) 4-6 Cups diced yellow onion (to taste) 8 cloves of diced garlic 2 Cups very strong black coffee 1 Cup Light brown sugar 1 Cup Cider Vinegar ½ Cup Pure Maple Syrup 1 tsp ground black pepper Cook & drain bacon or use the Costco crumbled bacon. In dutch oven add oil, onion and garlic. Cook over medium-high heat for about 8-10 minutes until onions are translucent or beginning to brown. Add Coffee, Brown Sugar, Vinegar, Maple Syrup and Pepper and stir well. Bring to boil and stir constantly for 2 minutes. After boiling for 2 minutes reduce heat and stir in bacon. Simmer for 2+ hours until liquid is thick and syrupy. Remove from heat and let cool for about 10 minutes. Place mixture in food processor and pulse a bit to get a spreadable consistency. Place in freezer containers for up to 6 months. Spread on toast or a burger or add to tortilla with eggs. Makes about 4 cups. Approx 150 Cal; 9 g Fat; 24 mg chol; 6 carbs; 8 g protein.
