Here is the yummy quinoa-avocado salad recipe I made for my Winnipeg guests while they were in town. I know Jenny Hall, Nicole Vann, and Taran Harvey wanted the recipe. Now others can enjoy it too! - 3 tbsp rasins - 2 tbsp dried apricots, thinly sliced - 1 cup quinoa - 1 large lemon - 3 tbsp olive oil - 1/4 tsp ground coriander - 1/4 tsp ground cumin - 1/4 tsp paprika - 2 medium-firm avodcados cut into chunks - 2 medium scallions, thinly sliced - 2-3 tbsp chopped almonds - freshly ground black pepper 1. Bring 2 cups water and quinoa to a boil over high heat. Cover, reduce to medium low, and simmer until water is absorbed. 10-15 minutes. Cool to room temperature. 2. Finely grate the zest from the lemon and squeeze 1 tbsp juice. In a small bowl, whisk the lemon zest and juice with the olive oil, coriander, cumin, paprika, and 1/4 tsp salt. In a large bowl, toss the vianaigrette with the quinoa, raisins, apricots, avocado, scallions, and almonds. Season to taste with salt and pepper.
