Here it is - my Three Cheese Ravioli with Italian Sausage that I adapted from my mom into a one pot meal! A one pot meal makes for easy cleanup on any night; especially busy ones! AIMEE FORTNEYS THREE CHEESE RAVIOLI WITH ITALIAN SAUSAGE (This is adapted from my Mom, Linda Jackson) My Mom ate at an Italian restaurant and loved the cheese ravioli with Italian Sausage so much that she decided she could make it at home. She did, I did, and now you can, too. My mom cooks everything separately, but Ive come up with a way to do it all in one pot. 1 package three cheese ravioli (found in freezer section) cooked and drained 1 Tablespoon olive oil 1 pound Italian sausage 1 onion, diced 1 red bell pepper, diced 2 cups of homemade marinara or you can use a jar of your favorite spaghetti sauce or marinara sauce 1 cup heavy cream (may add up to 2 cups) 1/2 cup red wine (I used Black Box Cabernet Sauvignon) fresh basil, for topping Cook the ravioli then set aside. In a medium sized pan, heat 1 Tablespoon olive oil. Cook Italian sausage, onion and bell pepper until sausage is done. Drain any extra fat that may have rendered. In a large measuring cup, mix together the marinara, heavy cream and wine. Add this mixture to the pan and bring to a boil. Reduce heat and stir in the cooked ravioli, or you may serve this on top of the ravioli. Top with chopped basil if desired.
