Here they are....rice and pea balls filled with gooey cheese! Ive just had a sneaky try and these are yummo! Im sure most people have encountered left over rice and thought what do I do with this? I also had left over mash from cottage pies. Here is what you will need to make these tasty balls.... Ingredients: (yields approx 12-14 rice balls) 1 cup of rice (I used basmati) 1 cup of mash 1/2 cup of peas 1/2 cup of grated cheese (I used mozzarella and tasty 2 eggs 1/4 cup grated Parmesan 1-2 cups breadcrumbs (homemade give a crunchier result) Salt/pepper to taste Olive oil for cooking In a bowl, add the rice and mash. They should be cooled if not using left overs. Add the mozzarella & tasty cheese. Steam the peas and add to the bowl of rice and mash. Season with salt and pepper. Preheat an oven to 180 deg. Roll the mixture into balls (approx 1 tablespoon of the mixture. In two separate bowls, add the breadcrumbs; to the other the eggs. Beat the eggs and add the Parmesan. Mix through. Roll the rice bell into the egg mix, followed by the breadcrumbs. Repeat until all the balls are crumbed. Add to a tray lined with baking paper. Spray with olive oil and bake for 30 mins or until golden. After school snack, lunch box filler, Saturday afternoon movie treat....these rice balls are perfect for any occasion. Ok, I need to go now as Im up to my 3rd rice ball!
