Smoked kale soup ---------------------------------------------------------- Serves: 4 Total Time: 30 minutes Ingredients - 90 grams Onions, raw - 100 grams Bacon or side pork, fresh, cooked - 16 grams Garlic, cooked - 1 tablespoon Olive oil - 97 grams Kale, raw - 1 cube Soup, beef broth, cubed, dry - 16 fl oz (no ice) Wine, table, red, cabernet - 1-1/4 cups, boneless, cooked Pork, neck bones, cooked - 3 tablespoons Butter, stick, unsalted Instructions 1. Prep: Chop onions, garlic, and bacon set aside, Tear up kale leaves. Add bouillon cube to 4 cups of hot water and stir to dissolve. 2. Cook In pot add olive oil and heat up. Add bacon to pot and fry until almost brown Add chopped onions and garlic and, a pinch of salt and pepper and unsalted butter. sauté for 3-4 mins One onions are translucent add wine and deglaze pot (make sure to scrape brown bits for more flavor) Cook for 5 mins. Add kale and cook for 2 mins Add beef broth and neck bones Cook for uncovered 30mins on medium. Remove neck bones and let cool. Once cooled remove meat from neck bones and toss back into pot discard neck bones. Simmer for 10 mins.
