Heres Carmens recipe for the Carob, Fennel & Coconut Krustini I change it slightly each time I make them; thats the fun of home cooking. Here is how I made those ones: Ingredients: 8 oz self raising flour (or plain + 1/2 tspn baking powder) 2 tbspns carob powder 6 oz soft brown castor sugar (or just white granulated) 1 tbspn desiccated coconut 1/4 cup raisins 1 tspn fennel seeds 2 large eggs (or 3 medium) lightly beaten 2 tspns vanilla essence (more or less) 1. Mix all the dry ingredients in large bowl 2. Add eggs & vanilla to make dough. Do NOT add water. 3. Place dough onto floured baking sheet and flatten slightly. 4. Bake in in Gas Mark 6 for 15-20 mins. 5. Take out of oven. Cut into 3/4 inch slices but leave in place. 6. Return to oven and bake for another 15-20mins. Times are approximate; cook until they are quite dry and crunchy. You need to know your oven I made some more yesterday. So quick and easy. Much more delicious than any you could buy ready made in shops :)
