Heres a Tip. I have posted this before, but incase you missed it here it comes again. If you ever (and I am pretty sure you have) baked a cake that has a lovely peak like the one I baked today, then instead of cutting off that peak and eating with a cuppa or just throwing in the bin. Here is what I do. As soon as the cake comes out of the oven. Take a piece of paper towel over the cake and place the next size down tin on top and press down for 30 seconds. Remove the tin and paper towel, and what you are left with is a perfectly flat cake. No need to trim. Invert on cooling rack. The next thing I like to do is, before the cake is completely cooled (still a little warm) I wrap it in plastic wrap. This helps the cake to stay lovely and moist.
