Heres a fun Recipe from Billie P. from Arizona, Here is a recipe that my aunt and I tried last night. It is very delicious. I couldnt stop eating it and it is so easy to make. Perfect light, summertime salad. All the veggies came from my baskets. Tomato and Corn Salad 6 c fresh corn kernels(from about 6 ears) 2 lbs cherry or grape tomatoes 4 scallions, thinly sliced 4 jalapenos, seeded and thinly sliced 1/4 c. olive oil 1/4 c. fresh lime juice Salt and pepper Cook corn just a few minutes, Kernels should still be crisp. In a large bowl combine corn, that has been cut off the cob, tomatoes, scallions, jalapenos, olive oil, lime juice and salt and pepper. Make Ahead Tip: Prepare salad without tomatoes and refrigerate for up to 1 day. Before serving add tomatoes.
