Heres a good low carb recipe for Meat Loaf. I tweaked several posts and came up with this one. It is taste bud approved !! A Low Carb Twist on Meat Loaf Ingredients: 2 lbs meat—I use 1 lb deef and 1 lb pork 1 cup crushed pork rinds ¼ finely chopped onion or 1 Tbsp onion flakes 2 cloves mince garlic or 1 tsp minced garlic 1 tsp dry mustard powder 1 tsp dried thyme ½ tsp black peper 2 tsp salt 2 eggs 2 Tbsp Worcestershire suace 2 Tbsp ketchup Preparation: Mix all ingredients together in a bowl. Using your hands is easiest, but don’t overmix. Bake in loaf pan at 350 F for about 1 hour. Meat loaf is done when temp reaches 155 F in center of the loaf. Nutritional info: Makes 8 servings. Each serving has 3.5 g carbs (mostly from ketchup) plus 2 grams fiber, 31 g protein and 400 calories (based on 80%/20% beef).
