Heres a plant based dish that will leave you feeling energized after eating, as WELL as satiated! I made this after my workout today for lunch, and I dont feel heavy or bloated like I would if i were eating real pasta. Slice 1/2 a spaghetti squash lengthwise, and put skin side up on a steam rack until fully steamed. Scoop out seeds and start scraping with a fork to make noodles. In a high speed blender, toss two-three handfuls of fresh cherry tomatoes, basil leaves, and a Tbsp of organic unsalted tomato paste. Blend w any other seasonings you like. Heat up a sliced Tofurky Italian sausage link, slice and toss all ingredients together. The heat from the squash will heat up your room temp sauce, and the salt already in the sausage should bring plenty of flavor.
