Heres a quick pictorial run through of the belly pork process at porky pork industries. Brine / 100g sea salt 50g brown sugar, pimenton, shallots, crushed garlic, thyme, bay. 12 hours just below the skin. Pour boiling water over the skin to open up the skin and really aid and abet the crackling process. Cook on high for 20 minutes at GM 8 then turn down to GM 3 for 3 hours......you will not eat a better piece of pork in you life........TPPXX
