Heres another gem from the ladies of the SOI cookbook. RICOTTA-SPINACH DUMPLINGS (Marie Scarsellato Rybacki) 2 pkgs. 10 oz frozen chopped spinach (cooked) 2 c. ricotta 1 tsp. salt 4 egg yolks grated parmesan cheese 1/2 c. flour 4 Tbsp. butter Bring 6 qts. of water with 1 1/2 Tbsp. of salt to a boil. Press all water from cooked spinach, and combine it with the ricotta, 1 tsp. salt, egg yolks, and 1/2 c. parmesan cheese. Drop rounded Tbsp. of this mixture one, by one, into flour and roll until each is lightly coated. Then drop these dumplings into boiling water and cook 5 min. Remove with slotted spoon to a plate. Spoon butter over top, and sprinkle with cheese..Makes 24
