Heres my food prep for the week! Salmon croquettes and smashed cauliflower!! Salmon croquettes. Canned salmon, 1/2 cup bread crumbs, 5 green onions diced, 2 whole eggs, 3 egg whites, coconut oil, salt pepper and garlic powder. Use a non stick fry pan and use some coconut oil or olive oil just to coat the bottom.. mix all the ingredients above (except the coconut oil)... make into patties and cook on each side.about 5 mins. *** the canned salmon will have tiny bones in it. U can pick them out or cook them in with it*** SMASHED cauliflower! I wanted to make a larger serving so I used 2 heads of cauliflower, 5 green onions cut up, I ONLY USED 1 package of cream cheese, u can chose fat free or low fat... low fat WILL have a better taste), and about 12 ozs of low fat sour cream. Boil the heads of cauliflower for about 10 mins then drain water... mix in all ingredients and mash up just like you would mashed potatoes... season with salt and pepper to taste. I then added sharp cheddar cheese and bacon to mine!! yummmm
