Heres my healthy take on the Vietnamese Banh Mi Sandwich. You only live once, so shake up your healthy lunch! Healthy Banh Mi Sandwich Ingredients: • ½ cup rice vinegar • 3 Tbsp. organic evaporated cane juice or agave nectar • 2 carrots, thinly sliced (about 1 cup) • 1 cucumber, thinly sliced • 1 cup Napa or Savoy cabbage (or any cabbage you like) • ¾ tsp Himalayan salt, divided • 1-lb lean pork loin with no bones • 4 whole-grain/wheat buns • 1 cup fresh cilantro leaves • 1 cup fresh green onions, thinly sliced Instructions 1. In a small sauce pan, bring ½ cup water, vinegar and cane juice to a boil. Remove from heat and transfer to a heat-proof bowl and allow to cool for 10 minutes. Add carrots, cucumbers, and cabbage, and ½ tsp salt. Cover and refrigerate for at least 30 minutes or overnight. 2. Meanwhile, season pork with remaining salt and pepper. Mist a trill pan or indoor grill with cooking spray and heat to med-high. Add pork and brown each side until done and no longer pink inside. Transfer to cutting board and cut in long strips. 3. Divide pork among buns. Remove veggies with tongs from vinegar mixture. Make sure to shake off excess liquid so as not to make bun soggy. Divide veggies evenly between bread and top with fresh cilantro and green onions. *Serve with Cucumber & Pineapple salad (recipe to come)! Dont forget to share the love!
