ST LOUIS STYLE PORK RIBS W/ HERBED GRILLED CORN & SWEET POTATOES Serves 4 Ribs- 4 lb St. Louis style pork ribs cut in sections 3-4 bones wide 1 tbs New England garlic pepper seasoning rub (or Montreal Steak Seasoning) 1 tsp dry mustard 1/2 tsp paprika 4 tbs brown sugar 1 yellow onion cut in thin slices Water 1 cup of your favorite BBQ sauce Directions 1. Preheat oven to 325 2. Mix the garlic pepper seasoning, dry mustard, paprika, and brown sugar in small mixing bowl. 3. Sprinkle seasoning mix on both sides of the ribs and massage it into the meat. You want to really rub that flavor in there. 4. Cut 4 large pieces of foil and spray with non stick spray. 5. Place 1 section of ribs on each piece of foil and top with an onion slice. 6. Fold the foil around the ribs creating an envelope, but before sealing pour in 2 tbs water into each packet. Seal tightly. 7. Place on foil lined cookie sheet and bake 2 hrs. 8. Remove the pan from the oven. (You can prepare to this step a day in advance.) Carefully open packets and discard the onion slice. 9. Gently brush ribs with BBQ sauce and place on hot grill for 10-15 min turning once. Remove from grill carefully cause that meat will be falling off the bone tender! Enjoy Grilled Sweet Potatoes 2 large sweet potatoes cut in half length wise 3 tbs softened butter Salt Pepper 4 tsp honey Directions 1. Spread the cut side of each potato with the softened butter. 2. Sprinkle with salt and pepper. 3. Cut 4 large pieces of aluminum foil and spray with non stick cooking spray. 4. Place potato cut side down on aluminum foil. Wrap each potato in foil sealing tightly. 5. Place on medium-high grill and cook for 50 min turning once. 6. Remove from grill and carefully unwrap each sweet potato and place on serving plate. 7. Put 1 tsp of honey on each potato half and mash the meat. Yummy. Herbed grilled corn- What youll need 8 tbs butter softened 1 tsp salt 2 tsp sugar 2 tsp Italian seasoning 4 ears of corn shucked and rinsed Directions 1. Mix butter, salt, sugar and Italian seasoning until well combined. 2. Spread butter all over each ear of corn. 3. Cut 4 large pieces of foil and spray each with non stick cooking spray. 4. Place an ear of corn on each sheet of foil and wrap foil around corn sealing tightly. 5. Place corn packets on the grill at a medium-high temperature. 6. Grill 15-20 minutes turning often. 7. Remove from grill and carefully open each packet. ( invest in those corn on the cob holders...your fingers will thank you)
