Hi EDians !!! Its my first post in this group, hereby presenting an authentic rajasthani rice dish, Jodhpuri Kabuli. I have made kabuli last evng for a family get together of 25 people. Recipe given here makes for a family of four. Ingredients: For Rice Basmati Rice 1 cup Cinamon 1 inch stick Green cardamom 2 Nos Salt as per taste For Vegetable fry Potato (Peeled and Diced) 2 Onion (Peeled and diced) 2 Cauliflower Florets 1 cup Bread Slices (cut into squares) 2 Purple Yam (Peeled and diced) 100 gm Oil for frying For Gravy Ginger Garlic Paste 1 tsp Tomato (chopped) 3 Nos Green Chilly (Chopped) 1 No Curd 1/2 cup Red Chilly Powder 2 tsp turmeric Powder 1/2 tsp Garam Masala Powder 1 tsp Salt as per taste Oil 2 tbsp 1.Boil Rice in ample amount of water with salt, cinnamon stick n cardamoms. Drain Excess Water and Keep Aside. 2. Deep Fry Onion, Potato, Cauliflower florets, Bread crotouns n purple yam. And Keep Aside. 3. In a Pan, For Gravy, Heat 2 tbsp oil, fry ginger garlic paste, add dry masala n salt, add tomato, chilly n curd. Cook till oil separates. 4. Add 1 cup water to gravy, Mix fried vegetables , cook for 2 minutes n keep aside. 5. Now assemble Kabuli in a bowl,with alternate layers of Boiled Rice and Prepared veggie. Garnish with coriander leaves. 6. When Serving sprinkle 2 tbsp milk all over rice n microwave for 2 minutes. Serve hot.
