Here are my favourite ways to eat avos this season. Avo, citrus and papaya salad Dice 1 ripe avocado and squeeze over a little lemon juice. Peel 2 large oranges and dice or segment, reserving the juice. Peel, seed and dice 1/2 ripe papaya. Arrange on a platter of cos or butter lettuce and top with 40 g chopped cashew nuts. Mix 1 T wholegrain mustard with the reserved orange juice, 3 T olive oil, 2 T chopped coriander or mint and dress the salad before serving. Avo smoothies Place 1 ripe avocado in a blender. Add 1 cup plain yoghurt, 1/4 cup milk, 8 chopped strawberries and 2 T runny honey and blend until smooth. Add a few almonds too, if you like – this is the perfect breakfast on the go. Using avo instead of banana makes your smoothie beautifully creamy. Creamy avo and two-cheese dip Mash 2 ripe avocados with 100 g chevin, 150 g smooth cream cheese, 4 chopped spring onions, 2 T red wine vinegar, sea salt and freshly ground black pepper. Serve as a dip with toasted wrap triangles or tortilla chips. Eggs with lemony avo on toast Drizzling lemon over sliced avo not only adds delicious fresh flavour, but also keeps the avo from going brown. Drizzle 1/2 sliced avo and 1/4 cup wild rocket the juice of 1/2 lemon and serve on 2 slices of sourdough or wholewheat toast. Top with a poached or soft-boiled egg and 1–2 t crumbled Danish feta. Chocolate avocado icing Blend 1/4 cup melted dark chocolate, 2 ripe diced avocados, 1/2 cup condensed milk, 4 T cocoa powder and a pinch of salt until smooth. Add a splash of milk to loosen the mixture if necessary. Chill to set while you bake Woolworths chocolate cake mix kit or Woolworths double chocolate brownie mix according to package instructions.
