High protein bars. In the next year I have a few endurance races coming up. This got me thinking about nutrition through the races and what would be good to eat. I did some research and have taken some ideas and come up with a recipe that is healthy and will sustain you while you run. Recipe: 6 eggs, 260g of porridge oats, 50g flaked almonds, 2 bananas and cinnamon. Mix all the ingredients together in a bowl and pour into a baking tray and bake in the oven at 160 degrees for 20 to 30 minutes. These should last for 5 to 7 days in the fridge. This makes one baking tray so if this is to much you can reduce the quantities. These are a working progress so was thinking next time i make them i might add a touch of honey and some dried fruit. These also work great as a pancake. If you want a smooth texture you could blitz them together to make a fine mixture then cook them like you would a normal pancake.
