Hit a homerun tonight with this dinner.... YAHOO! Not bragging at all - just saying this recipe ROCKS!! Since we dont get pork here I used chicken which I brined for an hour prior to pounding. When I make it again Ill actually do the flour part the night before and the rest will fly together! The only thing I changed was that I added an extra egg ... doubled the Parmesan and added a seasoning salt to the flour. My kids all said it was the best chicken theyd had .... really? Putting this in the 5-star-do-again folder! Loved the side dish too - which Ill add in the comments. I was going to do a German potato salad but knew my kids wouldnt be too thrilled so went with a WS stand-by I love.... Pan-Roasted Corn Salad with tomatoes & Feta.... nothing fancy there... just some chopping ahead of time.
