Finished with Sottocenere au Tartufo(raw cow IT). Shrimp N Biscuits-sautéed gulf shrimp with Sea Island heirloom red peas, roasted parsnips, rutabaga, and shrimp jus. Served over a Purple Haze(goat CA) biscuit, topped with Bianco Sardo(sheep IT).
