Homemade Chipotle Burrito For those who dont have Chipotle in your town (me!). Now.. if youre living in Korea like I do, good luck finding some of the ingredients. I had to jump around between 3 foreign marts to find them. (High Street, Hannam Supermarket, Haddon House). Just looking for the ingredients was exhausting. Prepping was dreadful. So, I would not recommend you making it unless you are dying for Chipotle and youre living abroad. It takes long and the ingredients can get quite costly. Large flour tortilla Guacamole Pinto beans Lime cilantro rice Canned sweet corn Lettuce Sour cream Shredded cheese. I found a mexican shredded cheese blend Your choice of meat. I made carnitas Your choice of sauce. I made a mild pico de gallo Large flour tortilla Warm it up on a low heated pan. You can find a pack of large flour tortilla at Haddon House for 8,000won. Guacamole 2 ripe avocado 1 diced jalapeno 1/2 diced red onion 1 lime 1 chopped tomato salt & pepper to taste a little garlic powder a small handful of chopped cilantro 1. Mix everything into a bowl. You dont want the inside mushy part of the tomato. I dont know what its called, haha. It will only water down your guacamole. A Latino chef at my restaurant told me they only use outside of the tomato and he personally used garlic powder instead of diced garlic because it gives more flavor. 2. Put the guacamole into the cylinder. Pinto Bean If you live in Korea, these days you can find cans of pinto beans almost at any big stores. Department stores basement grocery foreign-good section, Homeplus, etc. Discard some of the liquid and heat it in a pan on medium heat. Slowly stir, cooking it for about 5-8 minutes, until the liquid reduces and thickens a little. Pico de gallo 1/2 cup of diced red onion 1 minced garlic clove 1 lime 1/2 tsp salt 1-2 seeded jalapeno peppers (you can substitute with 청양고추) 2 cups of diced tomatoes a small handful of chopped cilantro Mince, dice, chop everything and mix it in a bowl. Juice in lime and season it with salt. Adjust the salt to your tasting. Lime cilantro rice Taking short cuts! You know those Korean microwavable rice bowls? Haha. I bought one of those, heated it in the microwave. Put the rice in a pot, heat it in low to medium heat, mixed in some butter, some chopped cilantro, and a little lime. Not even half a lime. Just a squeeze. Adjust it to your tasting. And a pinch of salt. Carnitas I wont be sharing this recipe. SORRY! But you can find many ways to make carnitas. Searing and braising it in beer, milk, or whatever you feel like! Or you can slap some dry rub on the pork shoulder and pop it in the often on low for 4-8 hours!! I braised mine for 4 hours. There are tons of carnitas recipes online. If you season it correctly and cook it on low heat for a long time, you wont be disappointed. Alternative meat option HEY, Chipotle doesnt only have carnitas, right? If you want to keep it simple, cook some steak! Season the steak with salt, black pepper, cayenne pepper, and garlic powder! Thats it! If youd like to chop the steak up before cooking, then make sure to adjust the fire and not to cook too long. The smaller the meat, the faster it cooks. Steaks arent as forgiving as pork. You cook too long, you have a dry piece of meat. Cook it in some butter. Now all you got to do is stuff the burrito. Watch the video to see the order.
