Homemade Jelly Lollies.. This very requested and very delayed post is finally here! I have been making a batch of these jellies for the kids every week to take in their lunch boxes. I use the Great Lakes gelatin so I know theyre getting some of the good stuff every day. Now this is a very simple recipe and it depends on what you want to achieve. I use whatever fruit I have on hand and usually fruit that is just about past its prime. Chop it roughly and add it to a saucepan with at least a cup of coconut water. Simmer until the fruit starts to break down. You can strain the solids out of the mixture at this stage or using a stick blender blend everything till smooth (I dont strain it). Then measure how much liquid you have left as this will tell you how much gelatin you need. If you need more liquid add more coconut water or ordinary water, I usually make it up to 3 cups of liquid. Pour the liquid back into the saucepan and sprinkle the gelatin on the surface (1TBS gelatin per cup of liquid). Heat over a low heat stirring until the gelatin has dissolved. Pour into silicone moulds and refrigerate until set. KMart has silicone ice cube trays that are perfect for this. Store in the fridge for up to a week. I have found that they are fine in the kids lunch boxes all day and hold their form. Not sure how summer will go, but Ill be giving it a try regardless. The alternatives for this recipe are endless. Ive used fruit teas (for a completely sugar free jelly), coconut milk (to make strawberry and cream jellies), frozen mango, apple and Ive also done a pineapple jelly dipped in melted chocolate (I froze the jellies before dipping in the chocolate). If you want the mix a bit sweeter add whatever you use to the initial saucepan mix. I often add 2 tsp Nativa and a tsp of essence (depending on the flavour Im making). But you can use 2TBS of Rice Malt Syrup/glucose/honey/maple syrup if you wished. Its a matter of personal preference. Im making a tray of three layered jellies for my Mums birthday celebrations next weekend. Were then going to cut them into bite sized squares. Lots of cooking to do next weekend and Ill keep you all updated with pics and recipes.
