Homemade Jus! You will need, :- 1 kilo beef bones 1 kilo chicken bones or carcass bay leaves black peppercorns 2x500g tomato paste 2 tins of chopped tomatoes 1 bottle of red wine(2 halves) some raw carrots, celery, onions Herb of your choice, i like rosemary redcurrant jelly or cornflour (redcurrant tastes better) A very large pan! and water. 1] roast bones untill brown, add to pan add wine tomato paste, chopped tomatoes, peppercorns, bay leaves, and veggies. 2] add water to fill the pan and set to boil. once boiling turn to simmer for around 5 hours, turn off and leave to cool. 3] keep an eye on how much liquid has reduced, top up if needed. Boil again for another 5-8 hours. 4] you will notice a red oily liquid floating on top, thats the fat!! so remove all bones etc, and pass through a sieve so no bone fragments are in the liquid. 5] when settled skim the jus and remove fat. In a clean pan add the wine the other tomato paste and the fat free Jus. 6] set to simmer and reduce by half! when this is doen add some redcurrant jelly to edge off the bitter taste (the cornflour is incase you need to thicken more) 7] when its thick enought o coat the back of the spoon your jus is ready! you can freeze or leave in the fridge for 2 weeks! it will turn to jelly in the fridge but its easier to portion!! Have fun guys! and remember play about, i add different herbs for different flavours :)
