Homemade Veggie Pizza al a Papa: Whole Wheat Pizza Dough Ingredients: 1 cup warm water (96 to 100 degrees F) 2 tablespoons oil, plus more for bowl 2 tablespoons honey 1 tablespoon brown sugar 2 teaspoon salt 1 1/2 cups white bread flour 1 1/4 cup whole-wheat flour 1/4 cup oat bran 2 teaspoon yeast Directions: Combine warm water, honey, oil and brown sugar, and yeast in a stand mixer, making sure all are mixed together well. Then let stand for 10 minutes. Combine the flours, oat bran, and salt in a separate mixing bowl. With a dough hook, on low gradually add flour mixture to wet ingredients till it is all incorporated. Scrape sides down as needed. After 5 minutes, the dough should be combined enough to adjust the speed from low to medium. Mix for another 5 minutes. Be sure to stop and reposition the dough if needed. Stop the mixing. Divide dough into two equal parts. Place one in an oiled bowl and cover with plastic wrap. Refrigerate up to 3 days. Let the other dough rise in an oiled bowl, covered in a warm place till at least doubled in size. Spray a pizza pie pan with cooking or olive oil spray. Flatten dough by hand into an 8 inch circle, pick up and gently pull circle to increase its size, leaving a lip. Then place into pizza pan and gently spread evenly till pizza pan is full and lip is up to the edge. Cover and let rise. Preheat oven to 425 degree while pizza dough is rising. When oven is heated, dock dough with a table fork, and place on middle rack. Cook for 12 to 15 minutes. Then remove and let rest. I always pre-make the sauce. It can be refrigerated up to 2 weeks. Pizza Sauce Ingredients: 1 6 oz. can tomato paste 1 1/4 cups water 1/3 cup olive oil 2 minced cloves garlic 1/2 tsp dried Rosemary 1/2 tsp dried Basil 1/2 tsp dried Oregano Salt Pepper Pinch red pepper flakes Directions: Whisk all together. Simmer 30 minutes. This can be combined with tomato sauce to the consistency you like best. Usually 1/2 and 1/2 works well. Toppings: 1 Tbsp Olive Oil 1/2 Onion cut into thin, 1 to 1 1/2 inch long strips 1/2 Red Bell Pepper cut the same 5 or 6 Cremini Mushrooms, halved and cut thinly 12 or so Black Olives, sliced thinly 1/2 tsp Basil 1/2 tsp Herbs de Provence 1/2 tsp Italian Herbs Pinch red pepper flakes (1/8 to 1/4 tsp) 12 Cherry Tomatoes, sliced in half lengthwise 1/2 cup Parmigiano-Reggiano cheese, freshly grated 1 cup Mozzarella cheese, grated Directions: Heat oil in skillet. Add onions, red bell peppers, mushrooms, and olives. Saute 2 minutes. Add salt, pepper, and herbs. Saute another minute. Turn heat off. Assembly Spread warmed pizza sauce on pizza crust thinly. Spread sauted vegetables on top of sauce. Place halved cherry tomatoes on vegetables. Spread Parmigiana cheese then mozzarella cheese over the pizza. Bake in oven for 12 to 15 minutes. Remove and let sit for 5 minutes, then slice and dig in.
