Homemade chicken noodle soup buy a rotisserie chicken (a savory one if you have a choice) , pull the skin off - set aside, pull the meat off put in separate pile, and throw the bones, wings, skin in a sauce pan .. add 5 cups of water, and simmer for an hour. in a big soup pot, throw in an oz of butter .. a diced onion, 3 sliced carrots, 3 sliced stalks of celery, 3 cloves of garlic minced, and saute util the onion is translucent, Strain the broth (to remove all the bones and skin) into the soup pot, add 5 cups of chicken stock (I used organic because thats what I had .. really didnt measure just dumped the 32oz. box in .. add the shredded chicken meat, 1/2 tsp pepper, 1/8 tsp cayenne, 2 tsp.Herbs de Provence, and about 1/2 tsp salt (because the chicken broth is salted) bring to a boil, then turn down to simmer .. for about 45 minutes (or til the carrots are soft .. bring back to a boil, and toss in half a bag of Mrs. Millers home made egg noodles and cook for about 15 minutes, stirring .. add more chicken stock if its too cooked down .. voila. If you dont have Herbs de Provence on hand, its basically Savory, Rosemary, Oregano, Thyme, Basil, Marjoram, and fennel. I just realized I grabbed Fines Herbs - parsley, chives, cherval, and tarragon .. oh well ... it was still really good !
