Homemade lower carb/lower calorie/lower fat Hot Chocolate 1 cup skim milk, warmed in microwave for 1 minute 1 heaping tablespoon cocoa powder (or measure out to your taste) 1 heaping tablespoon Splenda granulated sweetner (my preference of artificial sweetners) 1 teaspoon vanilla extract 1/2 teaspoon ground cinnamon Cold water to mix with dry ingredients to make a loose paste Microwave the 1 cup of skim milk. In a large cup, add all the dry ingredients and mix together. Stir in the cold water to make a loose paste (you dont want it to clump up when you add the milk, so it needs to be more liquidy than dry). After you have mixed the water and dry ingredients together well enough to work out the lumps, begin to add the warm milk slowly, stirring constantly. Microwave for another 30 seconds to 1 minute, depending on how hot you want it. I add either International Delight Sugar Free Pumpkin Pie Spice creamer or Sugar Free French Vanilla creamer. I do not know the exact calorie count, but the carb count is low: 13 carbs for the 1 cup of milk, and the creamer is only 1 carb per 1 Tablespoon serving. I like to add 1/4 cup creamer to the heated hot chocolate, so that gives me a total of 17 carbs. Sip and enjoy :-)
