Homemade veggie beef soup and cornbread is whats for dinner tonight. The soup tastes just like the one my mom used to make when I was a kid. HEALTHY comfort food!!! So good. Want a recipe? Here ya go! 1 lb extra lean ground beef (I used ground venison) 2 slices center cut bacon, chopped 1 large onion, chopped handful baby carrots, halved and cut into small pieces (or chop a carrot) 3 cloves garlic, chopped or 3 tsp minced garlic 1 1/2 Cups frozen peas 1 C frozen corn 1 can green beans with liquid 1 can fire-roasted tomatoes with liquid 1 1/2 C water (more if needed) 2 T Worcestershire sauce (more if needed) 2 tsp dried parsley 2 tsp Montreal steak seasoning Heat a pan over medium heat with about 1 tsp olive oil in the bottom. Add bacon and saute until some of the fat renders. Add onion and carrots and saute until onion starts to become tender. Add meat and salt and pepper to taste. Cook until meat is browned and no longer pink. Add garlic, tomatoes, Worcestershire, parsley, and Montreal steak seasoning, Add the water and stir well to combine. Bring to a boil. Reduce heat to medium low and simmer for 30 minutes. Add peas and stir. Cook for 10 minutes. Add corn and cook for another 10 minutes. Add green beans and more liquid if needed. Cook for another 10 minutes. Turn off heat and allow to rest for 5-10 minutes before serving (I like to about a T of ketchup!)
