Hot Cheesy Taco Dip, start to finish: Preheat oven to 400 degrees. Heat a #8 skillet on the stove top...when hot, add a little oil, 1/2 of a chopped red onion and one pound of ground beef. Cook til beef is done and crumbly. Mix in two cloves of minced garlic and cook a few more minutes. Drain and set aside. In a large bowl, place 8 ounces of softened cream cheese, 1/2 cup of ranch dressing, 1 tablespoon chili powder, 1 teaspoon of cumin and 6 ounces of shredded cheddar or Mexican blend cheese. Mix well. Combine meat and cheese mixtures and mix well. Return to cast iron and top with another 6 ounces or so of shredded cheese, then put into preheated oven. Bake for 20 to 25 or until cheese is browned and bubbly. Serve with Scoops Tortilla Chips. ENJOY! :-)
