Hot Pockets have a bad reputation, and not just because of the Jim Gaffigan sketch. Theyre highly processed convenience food without much nutritional value. This recipe, shared by running blogger Linda Melvin of running4two, uses fresh ingredients to create a family-sized Hot-Pocket-like thing...one that you might actually feel good about eating. It requires more work than pressing a few microwave buttons, but not much. Prepping the filling requires just about 20 minutes, and baking it, just about another 20. The filling is veggie-packed, featuring lean protein from the ground turkey, instead of preservative-packed, featuring a side of regret and gastrointestinal distress. Homemade Hot Pocket Recipe by Linda Melvin of running4two What youll need: 2 cups sliced zucchini and/or yellow squash 1/2 cup chopped portabella mushrooms 1/2 bag baby spinach 1 pound ground turkey 1 jar pasta sauce 12 ounces pizza dough (give or take) 1 cup mozzarella cheese 2 cloves garlic, minced (optional) olive oil salt and pepper to taste How to make it: In a large saucepan, heat the olive oil over medium, then cook the turkey, zucchini, and yellow squash. Once the turkey is no longer pink and the squash is starting to soften, add the mushrooms, spinach, and garlic (optional). Once the spinach has started to wilt, add the pasta sauce, and cook until heated. Meanwhile, grease a baking sheet and roll the pizza dough out flat. Add the mixture to the center of the dough and sprinkle with mozzarella cheese. (Depending on how thinly you roll the dough, you may have filling left over -- it works well atop pasta.) Fold over the edges and try to cover most of the filling. Brush the outside of the dough with olive oil and bake at 400 degrees for about 17 minutes, or until the dough turns golden brown. Serves 4-6
