How about a slightly tipsy tomato pasta dish for supper tomorrow? Ready in 20 minutes and serves 4. What you need: 1 chopped onion, 4tbsp olive oil, 2 crushed garlic cloves, a pinch dried chilli flakes, 2tbsp tomato puree, 150ml Pinot Grigio white wine, 2x400g cans chopped tomatoes, 1tsp sugar, small bunch basil leaves, 400g dried pasta bows and 250g cherry tomatoes, halved. Fry the onion in oil for 5 minutes, to soften then add the garlic, chilli and tomato puree and cook for 1 minute. Tip in the canned tomatoes, sugar and a few basil leaves and simmer for 15 minutes then add the cherry tomatoes. Meanwhile, cook the pasta in boiling salted water for 10 minutes or until al dente and drain. Return the pasta to the pan with the tomato sauce and cherry tomatoes and stir in. Season and serve with a few basil leaves scattered over. ENJOY!
