How about some Gumbo for Fat Tuesday ?? 2 med onions chopped 2 cups celery chopped 2 cups chopped carrots Large can diced tomatoes Large can chicken broth 3 tablespoons chopped garlic 2-4 tablespoons Cajun seasoning Salt and pepper to taste 1 bag frozen okra 1 poundBoneless skinless chicken breast 1 pound shrimp 1 pound chorizo 1 cup very dark roux Sauté vegetables, onion and garlic until translucent in a pot. In a fry pan make the roux. Equal parts butter and flour. Stirring until red brown. Add chicken and chorizo to cut up to veggies. When chicken cooked Add tomatoes and chicken broth,1/2 can water, and Cajun season according tongue spicy you want it. Salt and pepper to taste bring to a boil. Add roux. Simmer for 45 min. Add shrimp and okra Serve over white rice.
