How to loose some holiday pounds ....EAT GREET PAPAYA SALAD. Green Papaya Salad ....Chef The Spice Merchants Daughter - Christina Arokiasamy Serves 4 3 tablespoons fresh lime juice 3 tablespoons fish sauce 4 tablespoons palm sugar 1 small green papaya 4 garlic cloves 2 to 3 Serrano chilies, to taste, sliced 3 ounces yard long beans, washed and cut to ½- inch lengths ½ cup whole cherry tomatoes, cut into half 5 tablespoons roasted unsalted peanuts, crushed 10 butter lettuce leaves 1. To prepare the dressing, combine the lime juice, fish sauce, and palm sugar in a bowl then whisk well to combine the flavors. Cover and refrigerate for 15 minutes or, until ready to toss in salad. 2. Peel the papaya. Shred the papaya with a grater. Grate only the green fruit, stopping when you come to close to the inner tender layer. Set aside. 3. Combine the garlic and chilies in a mortar and mash with a pestle. Add a little of the raw papaya into the mortar and slightly bruise with the wooden pestle. Continue to do this until all the papaya is used up. Transfer to a medium bowl then add the long beans, tomatoes and peanuts. Pour in the dressing and toss well. 4. To serve, place the salad on a serving plate and arrange the green lettuce on the side. To eat, each person uses places a small amount of papaya salad on the lettuce leaf and takes a bite into it and enjoy!.
