I&J Light & Crispy Haddock stuffed tomato: Ingredients: 4 ripe tomatoes, ½ chopped red onion, pinch of chopped thyme, 1 grated I&J Light & Crispy Haddock fillet and brie cheese wheel. Method: Cut the tops off the tomato and remove the centre with a knife. Mix the onion with thyme, the inside of the tomatoes and the grated I&J Light & Crispy Haddock. Add salt, pepper and a splash of olive oil. Stuff the tomatoes with the mixture. Slice the brie and place on top of the tomatoes. Bake at 180°C for 20 min.
