I actually season my meat by mixing into it, a mixture of Bar B Q sauce (usually brown sugar and hickory or some such flavor) and I use McCormicks meat seasonings (Usually Apple wood rub or Montreal Steak). Since I put BBQ sauce in the meat, the patty comes out juicy and an additional condiment isnt really necessary. My favorite toppings include caramelized onions and sauteed mushrooms (in butter), bacon, fresh tomato, horseradish sauce, blue cheese, feta cheese, American cheese, mayonnaise, Cole Slaw, fresh red onion, dried cranberries (they go awesomely with Blue Cheese) and bread and butter pickles. The bun shouldnt be too hard but it should be firm enough that it doesnt disintegrate in your grip. a nice sourdough or sweet roll can work well. I very much dislike English Muffins for burgers. I do love a good burger paired with a good craft beer.
