I always have a happy hubby when I make Tinga! Shredded chicken cooked in a tomato/chipotle salsa and sauteed onions. Served with sour cream and tostadas (tortilla chips would do just as well, but were used to the circular ones). :) Then the dessert... little cupcakes with fresh diced strawberries, and a melted dark chocolate center, dusted with powdered sugar! :) (Oh, yes, and Mrs Meaghan Simons, I didnt get them done early... Ill bring over some tomorrow after Stephen and I get up.)
