I always wanted to recreate Grandmas stuffed bell peppers but she used ground beef. I am a vegetarian. Then I thought...just be creative! So I sauted onions in olive oil, added bell peppers, chopped fresh. garlic, tomatoes, jalepenos, celery, fresh oregano, fresh ginger and fresh celantro, added a dash of sea salt, garlic powder and ground black pepper. Then I stirred in tomatoe paste and a 1/2 -1 cup of water. Next, I mixed this sauce with a pot of rice. I cut off the tops of large bell peppers and stuffed them with the rice and sauce mixture. I placed the stuffed peppers in a lightly oiled aluminum pan. I added just a tiny bit of water at the bottom of the pan and then covered the top of the pan of peppers with foil, baked for 30 mins on 400 degrees and wallah! Omg, when you bite into it, you get a burst of delicious flavors. To fill everyone up, I also cooked corn from the cob and sauted it lightly with the same veggies I had cut for the stuffed peppers, added a dash of ground black pepper and sweetner. I also mashed potatoes, steamed spinach, sprinkled with cheese (oprional) and prepared deviled eggs for meat eaters. Who said being a vegetarian has to be boring and non- filling? My kids are full EVERYDAY! Do try this at home! :)
