I am NOT a cook...but I came across this 9 healthy ways to use Plantains and want to pass it on your way. Of special interest is the non-bread, vegetarian Thanksgiving Day stuffing recipe AND the non-flour, fluffy pancake recipe. (of course these are healthier made with coconut oil and the plantains should not be cooked at high temps).
