I am at work again tonight, and this time I am having some take-out Thai Green Curry! Its actually my leftovers from last night - it was Girls Night with Thai take-out and some Gilmore Girls on Netflix!! I got in a good 6 mile run outside today after I waited for it to get a wee bit warmer and drier! It really threw me off to wait that long to run - I should have eaten more than just half a banana and a tbsp of natural peanut butter this morning! I didnt have quite enough fuel for a fast run and I was starving! Then I had some unexpected changes in my afternoon so I didnt get to eat after running either! So I am scarfing this dinner down like a crazy woman!! 😜 Although I am at work, I feel like I am curled up with a warm, fuzzy blanket as I eat this curry! Its perfectly rich, slightly creamy, and extra spicy!! 😍
