I am hosting, hostessing? a family Christmas Brunch this coming Saturday morning. I believe I have found the recipe I am going to use for a Breakfast Casserole. There were no pictures, no reviews, but it sure sounds great to me. I believe instead of Ham I am going to substitute Sage Sausage. I love that I can make it on Friday, and just pop it in the oven on Saturday! :-D I will let everyone know how it turned out. Christmas Morning Breakfast Ingredients: 1 dozen eggs 2 cups cheddar cheese 1 onion, finely chopped 1/4 cup butter 1 cup milk 1 teaspoon dry mustard 1 teaspoon onion powder 1 teaspoon paprika 1 teaspoon black pepper 2 teaspoons salt 1 (24 ounce) frozen hash brown potatoes 1 lb bacon 2 cups cubed ham Directions: 1. Grease a 9x13 deep dish casserole with butter. 2. Cut bacon in one inch strips and fry till crisp, drain on paper towels to remove excess grease. 3. Add chopped onion to bacon drippings in pan and sauté until clear. 4. In a large bowl beat together eggs, milk, seasonings. 5. Add to the bowl the frozen hash browns, sautéed onion, cheese, bacon, cubed ham and mix well. 6. Pour into greased 9x13 pan. 7. Cover tightly with plastic wrap and refrigerate over night. 8. When ready to bake, preheat oven to 350 degrees. 9. Remove casserole from refrigerator and remove plastic wrap. 10. Bake at 350 degrees for 45-1 hour just until center is set (no wiggle but dont over bake!). 11. Let set for 5-10 minutes and serve in slices.
